Why mix A-2 with baking soda ?
In fact, it is possible to making sponge products only with baking soda alone. So why do we use baking powder like A-2?
Since baking soda is a highly alkaline substance, it gives the finished product a strong alkaline smell and a distinctive yellowish color. By adding A-2, the pH of the finished product can be brought closer to neutral or weakly acidic to adjust the color and flavor, so that the quality of the finished product becomes excellent.
