Alginate preparation T-7 keeps finished product’s moisture to prevent oozing of moisture, and make its texture softer. It improves a yield of a finished product as well. You can simply add T-7 to coleslaw then moisture oozing will decrease. Also, you can add T-7 to Sushi rice then its softness will remain for longer time. The ingredients are carefully selected and do not affect the taste.
